Apart from the fact that when you’re an adult you can do whatever you want (within reason), another joy is that you enjoy things that when you were a child were YUCK. Coffee, wine, tea, vegetables, salad, going to bed, entire day walks … the list of glory goes on.
One of my own personal loves is coffee, mmm coffeee. Don’t get me wrong, I am also a huge fan of tea and drink more tea than I do coffee, but that’s what makes coffee even better – it has the treat factor. Another great love of mine is pottery – pottery mugs, pottery bowls, kitchen pottery anything! My super awesome and very dear friend Mecca, who fluttered back to her homeland of Canada last year (sob), is a most excellent potter. I went to a few classes with her, but unlike Mecca who had patience, skill and talent – I did not. Therefore, these days I’m all about supporting other people who are successful potters, and one mug at a time my flat is being taken over! Did I mention that I love my flatmates??
Anyway, before I launch into a coffee recipe, you should know that the majority of the pottery featured throughout my blog has been made by Mecca. I was lucky enough to score heaps of her handmade pottery when she moved back to Canada, and eating out of a beautiful pottery bowl or sipping from a hearty pottery mug that Mecca has made, makes the enjoyment factor even greater.
Ok! Nut Milk Coffee …
You can use any nuts you like, in this recipe I have used almonds but my next two favs for coffee are hazelnut and cashew nuts. Oh my god it is good! I’m going to put instructions for those of you who have a Thermomix – YUSS!! But if you don’t, ignore this part and add everything into a pot, or you could put all ingreds into a mug (not pottery) and bung into the microwave to heat up.
So …
First of all, make your nut milk – see my previous post.
Measure out a cup of the nut milk into the cup you will be using, then pour into your thermomix. Now, here’s where you can all judge me, use a teaspoon of your all time fav instant coffee – yes, instant! You actually can use espresso if you have the contraption but if you don’t have loads of time/aren’t phased by dirty old instant coffee, then it’ll be fine! Then add about 1/4 of a teaspooon of pure vanilla bean paste and pop the lid on your thermie and set to 3.5 – 4 mins, at 80 degrees, speed 4. Keep an eye on the time and if you like a bit of froth give it a wee zap up to speed 8/9 in the last 5 seconds.
Sweet note – if you fancy your coffee to be a little sweeter you could also blend a date into it, zap on speed 8/9 to ensure it dissolves, but that will definitely add a sweet kick if you require it 🙂
Pour into your (pottery) mug, relax and love it!
