Summer dreaming …

I find that people often fit into one of two categories – lovers of ice-cream, or not so much. I’m in the first category and am a huge fan. My fabulous flatmates are also on this wave length which makes it a danger zone but delightful at the same time, and we often have flat dates perched on the floor (why don’t we sit on the couches??) having natter sessions over ice cream. It is good. So good. Our other mutual flat love is of tea … and the heat pump … but I’ll save those stories for another day.

Recently Leonie (flatmate/flatwife/epic friend) and I have discovered the delights of the Wooden Spoon Boutique Freezery – oooh yes, craft ice cream, say whaaaaaaat?! Move over craft beer (jokes … sort of). Amazing. The Wooden Spoon gang are based in Wellington and their ice creams are like the homemade kind. The ice creams aren’t clean eating as such but they don’t use pre-made mixes, stabilisers or preservatives so that’s something and is ok for a wee treat. And oh, SO yum. Oh and some other epic store bought ice cream is Little Island Ice Cream made by Tommy and James. This used to be called ‘Nice Cream’ so don’t panic it hasn’t disappeared, it’s just changed it’s name, hurrah! So Little Island Ice Cream is made with coconut cream and not dairy so is good for those with dairy allergies/intolerance AND it is yum.

Anyway, on to a recipe that is clean eating and is pretty scrummy on a hot summers day or a cold winters night (if you fancy).

Banana-nut and berry ice cream

Serves 1

¼ cup of raw cashew/almond/coconut/your choice of nuts

1 frozen banana

½ cup of your fav frozen berries – I’m a huge fan of blueberries

Sprinkle of cacao nibs

Throw the nuts into your blender and whizz until they are chopped up chunky-style. Then add the frozen banana broken into a few pieces (in order to avoid blowing up your blender), then add the berries too.

Blend until the mixture appears to be smooth and creamy, pour into a bowl and top with a few cacao nibs and you’re done!

A yummy treat! The first time I tried this I was skeptical but seriously, it’s yum. Also, a tip for young players, before you freeze the bananas you need to peel them – yes, the rookie over here did NOT do that the first time around and getting banana skin off a frozen banana is some sort of mental and physical challenge. Take the easy route guys, it’s the better way forward. You could even chop the banana’s up before you freeze them too … this just keeps getting better.

  1. YUM! I’m SO making this! I’ve heard about frozen-banana-ice cream but not made it before (although I do love frozen banana in a smoothie) and yea, huge mistake not to peel them before freezing, I’ve done that too :-). What berries did you use here? Blueberries?

    1. Yep blueberries 🙂 So yummy! But you can suit yourself with the nuts/berries or you can skip the berries altogether and just go for good-ol banana styles. Whatever you fancy! Thanks for the comment 🙂
