Green juice, dream juice

If someone had of told me 10 years ago that I would enjoy drinking blended salad in a glass, I would have screwed my face up and disagreed. The phenomenon of green juice that has hit the world with its health and hydration benefits is something to be in awe of.

My version of juice actually is more that of ‘everything blended’ as opposed to juicing and discarding pulp etc. This is partly due to not having a juicer but also I figure I’m able to reap the benefits of the entire fruit/vegetable by just blitzing the whole thing into smithereens. 

A basic green juice recipe I use contains the below ingredients, and ice and water! Don’t forget the ice, it cuts through the veges and helps the blending process. You can throw anything in though but I usually at least try to use:

Loads of kale/spinach/both

1-2 carrots

1 zucchini

½ a lemon (pealed)

½ apple/orange – frozen is fine!

Approx 750ml of water – depending on how much you’re making.

A decent sprinkle of chia seeds or coconut oil is essential – in fact any ‘good’ fats are fine to use as you need these to release all of the fabby vitamins in the veges. I threw some almonds in this one for a bit of protein and good fat hit too! I recently, and quite spectacularly, fell of the Iron and vitamin B12 train and found myself swimming in a pool of fatigue, however, by doing so I found out a lot load of stuff! It is key to release the Iron in food with a shot of citrus, hence the lemon and orange. It also helps to avoid caffeine for about an hour before and after consuming Iron rich foods as caffeine inhibits the absorption of iron – the things I never knew!

I make about a litre of green juice at a time and just keep it in the fridge as I drink it – it keeps well for a few days.

There are a variety of other juices/blends you can make too – beetroot makes a yummy version, obviously less ‘green’, but as long as you’re a beetroot fan it might jam with your taste buds nicely.
